Is there any kind of convention here for identifying oneself as a switch? And how in the heck do I let people know what hat I am wearing at any given time?

Most members place there desired titular distinction in their profile page.
When love beckons to you, follow him,Though his ways are hard and steep. And when his wings enfold you yield to him, Though the sword hidden among his pinions may wound thee

The problem with that is the title can change day by day. Today I may be a Mistress and next week I may be looking for one myself.
Or do you think I should change my profile every time?
No, I think you shouldnt worry about any specific title in a chat room at all truth be told.

Think you are missing the point entirely, how do I let others know when I am being a domme, versus when I am in a submissive mood?
Tell them, its that simple.
Having a titular distinction doesnt make one more or less dominant or submissive.
Anyone is capable (vanilla or otherwise) of eaither dominating or submitting to the right individual as needed depending on the circumstances and situation anyways.

Or... if you feel you must, modify your profile so that you tagline (that appears directly under your name,) says "Today I'm Topping" or "Bottom Beggar" or something similar.
That said, it still requires someone interested to go look.
The easiest way, as denuseri points out, is to tell people as the beging conversing with you.
Of course, please try to avoid referring to yourself as The Great and Powerful Oz... as that would be me.

Chat in this place is generally very low protocol and low play. Its mostly there for what it claims to be - to chat. Very few people seem to care about titles etc, we all chat as we like to chat regardless of status and most seem to have the opinion that an other person may be a Domme but they are not MY Domme and vice versa - unless a specific relationship is in place (in which case, yes, you can call them Mistress or pet or whatever), sub or Dom/me is irrelevant as we are just friends having a chat. Same as a munch or other similar gathering.
Generally, anyone who comes into most chatrooms I have been in demanding to be called a particular title or begging all the Dom/mes to 'dominate this poor sub' will get short shrift from the majority. Most switches I know generally don't switch day to day anyway - it is more a person to person thing. There have been scenes I have been in where a switch is being dominated by one person to dominate another, for example (and in at least one of those instances, I was the sub and I am also a switch... was being dealt with by a Domme while a TS switch was biting my nipples on the orders of the Domme).
So, relax about it and be yourself in the chatroom and see who is there and who responds to you in what way.
